Singapore fried noodles. Vermicelli is fragile so be careful!

Serves 2-4
Ingredients:
200g Vermicelli
150g pork fillet, marinated in soy sauce, salt & pepper
4-5 banana prawns, marinated in salt & pepper
2 chinese sausages,
Β½ brown onion
3 garlic cloves
Handful snow peas
1 small red capsicum
Β½ carrot
2 eggs, whisked
Sauce:
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp wine
2 tbsp curry powder

Method:
Cook chinese sausages, pork and prawns, set aside
Fry egg, set aside
Soak vermicelli in hot water for 2-3 minutes then drain (must be half cooked).
In oil, fry garlic and onion, add in snow peas, capsicum, carrot and egg
Add meats and prawn
Add vermicelli, sauce and curry powder
Mix gently .
