My absolute favourite. I cook this almost once a week! Videos in my highlights 🙂

Serves 2-4

Ingredients
1kg pack pho noodles
½ brown onion, thinly sliced
Coriander, chopped
Spring onion, chopped
Thai Basil
Lime
Bean sprouts
Chilli

Broth ingredients:
500g beef shank or meat of your choice
1kg beef bones
1 maryland chicken
3-4 pieces star anise, toasted
1-2 cinnamon sticks, toasted
3 black cardamom, toasted
2cm ginger, skin off, sliced, toasted
4-5 garlic cloves, toasted
1 brown onion, toasted
Fish sauce, to taste

Method:
1.To clean the beef bones, bring beef bones to a boil and discard the water. Wash excess residue off
2. In a large soup pot, add all the broth ingredients in and bring everything to boil, then reduce heat to low. (You can leave your choice of meat or take it out after 1-2 hours if you prefer it to be firmer)
3.If you see residue on the surface of soup throughout, remove this
4. Either slow cook or leave on low heat for 5-6 hours. (The goal is to let all the flavours out into the broth)
5. Fish sauce to taste and serve with your choice of meat and garnish with the rest!
