Deep Fried Salt & Pepper Chicken Wings

2 lbs chicken wings, cut at the joint
1 cup shaoxing wine or chinese cooking wine
1 tbsp grated ginger
1 tbsp grated garlic
1 tbsp salt
1 tsp white pepper
1 cup sweet potato starch
1 cup corn starch
2 shallots, chopped
3 garlic cloves, minced
1 large red chilli, chopped
2 scallions, chopped
1 tbsp butter
salt and pepper
Marinate wings with wine, grated ginger and garlic, salt and white pepper. Allow to marinate for at least 1 hour.
Add starches into a large plastic bag, give it a good shake. Add to the bag 2-3 wings, gently rolling them until they are covered with the dredging. Shake off any excess and place the wings on a baking tray.
Brush wings with olive oil, set air fryer too 375F and cook for 10 minutes, flip, brush and cook for another 10 minutes or until golden brown (I deep fried the chicken instead as I don’t have an air fryer).
Heat up a pan under medium high heat, add butter, shallots, garlic, chilli, scallions and toast for 2-3 minutes until fragrant.
Add the chicken wings to the pan, tossing and mixing until they evenly coated. Add about 1/2 tsp of salt and pepper or to taste, plate then serve immediately.
