Healthy stuffed poblanos 🔥

Preheat your oven to 400°. Cut your poblanos lengthwise, and take out the seeds. Add avocado oil + salt and bake for about 10-15 minutes until roasted.

In the meantime, cut red onions and the leftover pieces of poblanos, saute them in an oiled pan with salt + pepper.

Add ground turkey and season with ancho chile powder, paprika, salt, onion powder, garlic powder + cumin.

Add black beans + diced tomatoes. If you’re not a black bean fan, you can sub out quinoa or rice! And to keep this vegetarian, you could just do beans + rice!

Once the filling is cooked, stuff the peppers, top with lots of cheese! (I used oaxacan and monterey jack)

Bake in the oven for another 5 minutes until cheese is melted. Serve with sour cream + cilantro.
