I’ve only made these twice before, wasn’t quite happy with the filling recipes I’ve read online so I played around with some flavours and this one seems to be pretty good I think! You can check out my highlights if you like visuals ☺️

Ingredients:
Serves about 18
Pastry (adapted from meatmen)
375g all purpose flour
¾ tsp salt
¾ tsp sugar
190g unsalted butter (at room temp (soft) chopped into chunks)
90ml chilled water

Filling:
5-6 dried shrimps, soaked in hot water (30 mins)
3 cloves garlic
½ brown onion
600-700g white potato (about 3-4), diced and soaked in hot water (30 mins)
4 tbsp curry powder
1 tbsp fish sauce
2 tbsp soy sauce
1 tbsp lemongrass powder
1 stalk curry leaves
2 kaffir lime leaves (optional)
600ml – 700ml of hot or cold water .

Pastry:
Sift flour, salt and sugar in a bowl
Add butter and use hands to squeeze flour and butter together until crumbly
Slowly add chilled water to the mixture and knead until a dough forms
Cover and rest for 30 minutes

1/ Process together or finely chop dried shrimp (drain water), garlic and onion
2/ Heat generous amount of oil in a wok/pan (4-5 tbsp)
3/ Add dried shrimp, garlic and onion, important to keep stirring as there will be splatter and bubbling
4/ After about 2 mins, drain water from diced potatoes, add potatoes
5/ Add 4 tbsp or more (up to you) of curry powder
6/ Add fish sauce, soy sauce, lemon grass powder, curry leaves and kaffir lime leaves, mix in well
7/ Add 500-600ml of hot or cold water and cover on low-medium heat for 15-20 mins or until thickened.
8/ Set aside to cool or put in the fridge
9/ Roll pastry into small balls, I encourage you to play around with whatever sizes you want!
10/ Flatten balls into circles
11/ Fold puffs in with the cooled filling (you can YouTube how to fold the edges together or visit my highlights)
12/ Heat up a LOT of oil in a pot, on low-medium heat, deep fry until golden brown (keep a watch!). .
