Fried rice pin noodles/silver needle noodles/mouse-tail noodles or loh shu fun. I was reminded by this dish during my grocery shop! Never known how to cook it or what to use but it turned out great after some improvising! .

Ingredients:
1kg rice drop noodles
250g pork mince
7-8 mini shiitake mushrooms or 4-5 large (up to you how much), thinly sliced
2 garlic cloves, thinly sliced
250g bean sprouts
1 stalk spring onion, finely chopped
Marinade:
1 tbsp soy sauce
1 tsp cornstarch
Sauce:
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp chinese wine
1 tsp sugar .

Method:
Marinate pork mince and shiitake mushrooms for 15-20 mins
Microwave rice noodles for 2 minutes
Fry garlic in oil until slightly brown
Add pork mince and shiitake mushrooms, fry until cooked
Add rice drop noodles
Add sauce, mix well
Add bean sprouts
Garnish with spring onion!
