Hainanese Chicken Rice
Ingredients:
Chicken rice:
2 cups raw rice
1 clove garlic, thinly sliced
2 tbsp butter
2 tbsp chicken powder

Chicken:
6 free range chicken drumsticks
Β½ brown onion, chopped into medium pieces
Small bulb ginger, thinly sliced
1 stalk spring onion, sliced into 4 pieces
2 tbsp sesame oil
1 bunch coriander, finely chopped
1 lebanese cucumber, sliced into round pieces

Chicken sauce:
Β½ brown onion, finely chopped
2 cloves garlic, thinly sliced
2 tbsp sesame oil
2 tbsp soy sauce
1 tbsp chinese wine
1 tbsp oyster sauce
1 cup chicken broth or hot water .

Chilli:
3 fresh chilli
2 cloves garlic
2 tbsp squeezed lemon juice
1 tbsp fish sauce
2 tbsp tomato sauce
2 tsp sugar
1 tsp salt
Ginger & spring onion sauce:
Ginger
2 stalks spring onion .
Method:
Chicken rice:
Wash 2 cups of raw rice and make sure water is drained
In a wok, add 2 tbsp of canola oil, add garlic until light brown
Add raw rice and fry on medium heat
Add butter, allow to melt and mix through, add chicken powder
Stir gently for another few minutes then transfer into a rice cooker and add water. Optional: instead of water, use chicken stock from boiling drumstick

Chicken:
Lightly rub himalayan salt on drumsticks
Bring a pot of water to boil, add onion, ginger, spring onion and 2 tbsp sesame oil
Add drumsticks
Boil for approximately 15-20 minutes without lid
Remove excess residue on the surface
After 15 mins, check if chicken is cooked
Once cooked, remove chicken from water (keep the water)
Slice chicken and serve with cucumber and coriander

Chicken sauce:
In a small saucepan, add 2 tbsp canola oil
Add garlic and onion until light brown
Strain the oil into a bowl (unless you want to keep)
Add sesame oil, soy sauce, chinese wine, oyster sauce
Add 1 cup chicken broth or hot water
Serve over sliced chicken .

Chilli sauce (optional):
Blend all ingredients together and add water and other flavours to your desired consistency and taste .

Ginger & spring onion:
Grate ginger and chop spring onions, salt
Use mortar and pestle to mash
Add hot oil .
