Mapo Tofu

Ingredients
250g pork mince
2 cloves garlic, finely chopped
Small knob of ginger, finely chopped
500g Evergreen Original Tofu, chopped into cubes
2 stalks spring onion, chopped
4-5 dried chillies, chopped and soaked in hot water until soft
3 tsp cornstarch mixed with some cold water

Sauce:
2 tbsp soy sauce
2 tbsp chinese wine
1 tbsp chilli bean sauce
1 tsp caster sugar
1 tsp chicken powder
ΒΌ cup hot water

1. Mix the sauce ingredients in a bowl
2. In a wok, add some oil and fry the pork mince until cooked, make sure to break up the mince into little pieces. Set aside
3. In the same wok, add a bit more oil and wait until it heats up again
4. Add garlic, ginger and pork mince back into the wok and stir fry
5. Gently stir in the tofu without breaking it
6. Add the sauce from step 1 and the dried chilli and let it simmer for a few minutes until the flavours have been incorporated
7. Mix the cornstarch in water until it is well combined and then add to the wok and stir until it thickens. Add more if it isn’t thick enough
8. Turn the heat off and mix the spring onions through
9. Serve with rice!
