Red Duck Curry
Curry paste is made from @recipe_tin’s recipe! You can find how to make this in my highlights or recent posts πŸ™‚
Below is my version of duck curry πŸ™‚
Serves 3-4
Homemade red curry paste from recipetin
380g duck breast @luvaduck
150ml water
400ml coconut milk
6 x kaffir lime leaves
1 tbsp sugar
2 tbsp fish sauce
8 x cherry tomatoes
8 x lychees
150g x bamboo shoot slices/baby corn
10-12 snow peas
10-12 thai basil leaves

Duck was cooked on a cast iron pan, each side fried for 4-5 minutes and in the oven at 190Β°C for approx 8 minutes.

1. Heat up oil in a pan
2. Add curry paste and fry for 2-3 minutes on medium heat
3. Add 400ml of coconut milk and 150ml of water, bring to a boil whilst stirring
4. Add kaffir lime leaves, sugar and fish sauce and stir for couple more minutes
5. Add tomatoes, lychees and bamboo slices and boil on low heat for 5 – 7 minutes until tomatoes are soft
6. Just before serving, add snow peas and thai basil and boil for 1 minute, then turn the heat off once snow peas are just cooked
