Thai green curry paste & red curry paste
I never fully appreciated how curries were made until I made my own. It’s easy to say that all it takes is blending all the ingredients above together but the actual preparation of every component is a real effort.
For example, grating a galangal is a workout in itself, there’s no shortcuts and it works best when it’s grated because it dissolves better. Seeds are removed from some chillies to reduce the spice but retains the flavour.
It doesn’t stop there because now we have to make the actual curry and clean up too 🤭! . It’s ALWAYS worth the effort though
